WHAT I EAT IN A DAY RECIPES – HELEN’S SPINACH MANGO CHERRY SMOOTHIE, BIG LUNCH SALAD & STEAMED BROCCOLI w/ CHEEZE SAUCE

 

BREAKFAST – HELEN’S SPINACH MANGO CHERRY SMOOTHIE

BREAKFAST- Thanks to ETL Family member Helen Shellman for graciously sharing this recipe!

Makes 32 ounces (1 large serving)

INGREDIENTS

1 inch fresh ginger
1/2 inch fresh turmeric
A grind or two black pepper
1 small lemon, peel, but leave 1 inch piece
2 cups spinach, packed
2 cups romaine lettuce
1 cooked Button mushroom
1.5 Tablespoons 1-ingredient almond butter
1 Tablespoons ground flax seeds
1 medjool date, no pit
1 cup frozen mango
1 cup frozen cherries
1/8-1-4 teaspoon nutmeg
1 1/2-2 cups unsweetened plant milk, your choice

 

DIRECTIONS

In high-speed blender (Vitamix) combine all ingredients and whirl until smooth. 

 

LUNCH – BIG LUNCH SALAD

Makes 1 Serving

INGREDIENTS

1 small head Romaine lettuce, chopped
2 cups spinach, chopped
1 cup shredded cabbage, chopped
1 cup chopped/ shredded greens + cruciferous veggies OR we used sweet kale mix (chopped kale, shredded broccoli stalks, red chicory)
½ cup no sodium garbanzo beans
1 large spring onion, sliced thinly
½ cup corn kernels (frozen or fresh)
½ cup low-sodium salsa
2 Tablespoons unfortified nutritional yeast (optional)

 

DIRECTIONS

In a serving bowl, place all chopped greens. Arrange garbanzo beans, onions, corn and salsa on top. Sprinkle with nutritional yeast, if desired and toss gently.

Serve with 1 cup strawberries.

 

DINNER – STEAMED BROCCOLI w/ CHEEZE SAUCE

CHEEZE SAUCE 

Makes 3-4 cups (6-8 servings) Freezes well, just whisk together when thawed.

The Sauce is delightful over steamed OR raw veggies. Can use as a Salad Dressing, warmed or cold.

 

INGREDIENTS

2 cups plain plant milk
½ cup raw, unsalted sunflower seeds, soaked in water for 30 minutes, rinsed and drained)
¼ cup hemp hearts
1 roasted red bell pepper
1 medium carrot, peeled, cut into chunks
3 Tablespoons cornstarch
¼ cup unfortified nutritional yeast
1 teaspoon garlic powder
1 teaspoon onion powder
¼-½ teaspoon chipotle powder (optional)
Juice from 2 small lemons (about 3 Tablespoons)

FOR EACH PERSON:

3 cups broccoli florets, lightly steamed OR raw

 

DIRECTIONS

In high-powered blender, add all ingredients, except lemon juice and blend for up to 5 minutes, until creamy and heated. SERVE OVER 3 cups broccoli florets, lightly steamed (5 minutes or until JUST cooked) 

SERVE w/ 1 cup fruit (we served watermelon chunks)

BREAKFAST – HELEN’S SPINACH MANGO CHERRY SMOOTHIE

This is a lovely spinach mango cherry smoothie. This recipe was generously provided by Helen who is one of our lovely Eat to Live Family members.

We put the romaine lettuce into the Vitamix add the spinach and then a small lemon that has been peeled, except for a small portion for added zest. Then in goes some ground flax, fresh ginger, ground nutmeg, fresh turmeric and freshly ground black pepper, then next some almond butter and plant milk.  When we use black pepper with turmeric – the pepper helps the body extract the goodness from the turmeric more thoroughly and you can’t even taste it. We add a pitted medjool date, a mango, and then some frozen dark cherries to round out the smoothie and blend it all up.

 

LUNCH – BIG LUNCH SALAD

For lunch, we are appropriately calling this our Big Lunch Salad – using tons of greens.  We start with some sweet kale mix and shredded cabbage,  then add some romaine lettuce and chopped spinach. We throw this mixture into our favorite two-quart Corel bowl.  Our toppings for this big salad are garbanzo beans, fresh corn kernels, purple onion, some heirloom cherry tomatoes and then we dress it with some salsa sprinkle and some unfortified nutritional yeast. We finished off lunch with some fresh strawberries for those berry g bombs.

 

DINNER – STEAMED BROCCOLI w/ CHEEZE SAUCE

Dinner is super simple and quick –  steamed broccoli with cheese sauce reminiscent of our childhood but way healthier and fresher. For the sauce we soak some raw sunflower seeds and drain them into the Vitamix.  Also some plant milk, hemp hearts, roasted red pepper, peeled carrot, corn starch and spices – all blended until it’s hot enough to cook – you can see that steam rising when the lid is removed from the Vitamix – about five minutes or so in. If you don’t have a high-powered blender like this or if you prefer to cook it in the microwave or a pan on the stove simply heat it until the sauce sort of comes together and heats through – about five minutes.  We need to stir it as it heats.  Add some fresh lemon juice and then it’s time to dress up the broccoli. Make a big old plate of steamed broccoli – have as much as you want! Add some sriracha sauce if you like for a bit of decoration and the slather that cheesy sauce all over.

We finished dinner off with a serving of watermelon to top it off.
