With summer already here (we call it Hell in Florida), we tend to get thirstier and crave cold drinks! I know I’ve been doing that SO much lately. And whatwith that and my increased water intake, I always end up stocking up on some pre-cut fruit at the grocery store because I crave watery fruit!
The other day I found myself with a container of watermelon in the fridge that was past the point where I’d eat it because it had gotten to that way-too-ripe state. But I hate wasting food (especially because the pre-cut stuff can be super expensive, so I made up this recipe to use it all up!
I’ve also been making lots of things with lemons lately, to keep my kidneys stone-free, so this naturally came about as a combination of all of the above.
When I tasted it, I suddenly realized that not only am I, in fact, a true genius…but that I also must share it with you, my Dear Beloved Reader. ;)
Make sure you try this one out — it’s so refreshing and would be perfect at any summer cookout or Fourth of July party!
Public Service Announcement: Oh yeah, and you could TOTALLLLLLY add vodka and kick it up one huge notch, but that’s just my opinion… :P
- 2 cups watermelon
- 1 lemon, peeled and seeded
- 3 dates (I prefer fresh medjool)
- Ice (or 1-2 ounces vodka;) if desired
- Combine all ingredients into your high-powered blender and blend until smoothie consistency.

I find that smoothies have a lot to do with the blender. I always suggest a high power one like a Vitamix. What do you mean by it doesn’t turn out right? I suggest you start with fruit smoothies as they are more difficult to mess up. Add some spinach as you go to get greens, but ones that you can’t taste! And don’t do berry smoothies for a bit because they are always more tart.
