Today, July 6th, is National Fried Chicken Day! YAHOO! I know I love fried chicken just as much as the next guy, so we’re naturally having a cocktail today for the Friday 5 O’Cocktail that will pair really well with fried chicken — a Pink Lemonade Cocktail!
This was originally published in Southern Living magazine and it really seems like it would be the most refreshing drink. I am told that even though the beer/lemonade combination sounds strange, don’t let it fool you – it is delicious! Just make sure you use a pale/light beer so that flavor doesn’t come through too strong and you are cookin’ with gas!
Pink Lemonade Cocktail
INGREDIENTS
1 (12-oz.) can frozen pink lemonade concentrate, thawed
3 (12-oz.) bottles beer (not dark), chilled
3/4 cup vodka, chilled
Ice
Lemon slices for garnish
DIRECTIONS
Mix together first 3 ingredients. Serve over ice in a large wine or highball glass. Garnish with lemon or other fresh fruits.
There’s a drink in Ireland called a Shandy….it’s light beer and lemonade! Not quite as fancy as yours, but it does the job as a thirst-quencher on a hot day!

What a gorgeous drink! I even like the shape of the ice cubes. I’m not into beer or liquor, but the colors are so pretty. I wonder what kind of juice combinations would make something like this?
Good question, Nanette! Let me think…I’d say something along the lines of pink lemonade + maybe a splash or two of apple juice? It also reminds me of kiwi strawberry Snapple…or what about like passionfruit juice + blended watermelon?! OMG, now I’m getting thirsty…
