CARROT CAKE BALLS 🥕
Makes 24 – 1” balls
INGREDIENTS
1 cup unsweetened shredded coconut
2 large carrots, peeled, grated on small grater
4 large pitted Medjool dates
¼ cup ground flaxseed
1 cup old fashioned rolled oats
⅓ cup raw, unsalted walnuts
¼ teaspoon vanilla powder OR ½ teaspoon vanilla extract
1 teaspoon Frontier Coop brand “Turmeric Twist Sweet Blend Spice” OR 1 teaspoon pumpkin pie spice + ½ teaspoon ground turmeric and a twist of freshly ground black pepper
¼ teaspoon ground Ceylon cinnamon
2 Tablespoons dried currants OR raisins
DIRECTIONS
In a large food processor with the flat “S” blade, buzz the coconut shreds to grind smaller (this sticks better on the Balls.) Place in a large shallow dish for later.
Combine carrot shreds and 4 dates and pulse to combine.
Add all remaining ingredients, except currants or raisins and pulse to form a ball. Add currants or raisins and pulse to combine into the dough.
If the ingredients don’t stick together, add 1 Tablespoon of water to form a cohesive mass.
Using a small scoop, scoop balls and roll in the coconut. Continue with all the Carrot Balls. Store in the refrigerator.

CHOCOLATE-ORANGE BITES 🍊
Makes 24 -1” Bites
INGREDIENTS
16 Medjool dates
¾ cup unroasted, unsalted cashews
¼ cup hemp hearts
⅓ cup plain cocoa powder (raw is best) + extra for coating
1 medium organic orange
DIRECTIONS
In a large food processor with the flat “S” blade, combine the dates and cashews: pulse to break them up.
Add hemp hearts, cocoa powder, 1 teaspoon of orange zest and 1 Tablespoon of orange juice. Pulse to combine. Add another bit of orange juice, if needed to stick together. You want a stiff dough- not too soft or sticky, so go easy on the juice.
Use a small scoop and make 1” balls. Roll in cocoa powder. Refrigerate until serving.

Holidays come up! We have one coming up next, Easter holiday! Spring! We want something fun to have and we’re Eating to Live.

So what do we do? We have some wonderful recipes that you can fill your Easter eggs with. I’ve got two recipes that I’m going to offer you today, that I think your family will love. They’re simple, you can make them with the kids, so forget all that egg dyeing stuff and let’s do some egg filling stuff.

Okay, first recipe we’re going to do is a carrot cake ball. Very simple. You need a food processor and four dates. To do the carrots I’m going to use this very small grater. You can use a box grater, the small part, because we don’t want big shreds. I’m almost at the end of the second carrot and this is probably about a half a cup of finely shredded carrots.

Then we need a binder, something to keep it together, and that’s going to be our almond butter. I have some fresh that I made. We’re going to put about a quarter of a cup in here. We’re going to do a quarter cup of flaxseed ground, a third of a cup of walnuts, a cup of oats.

So I’m using turmeric twist sweet blend from Frontier Co-op. You can do pumpkin pie spice, apple pie spice, anything with a little bit of spice. This has a little bit of turmeric in it. I’m going to do three quarters of a teaspoon of that.

We’re ready to pulse! Okay a little bit of vanilla powder, quarter of a teaspoon, and then I’m going to use just a few currents. If your kids don’t like raisins,  then don’t use the currents. All right, we’re going to call that done.

So what we’re going to do is roll them in coconut. I’ll do some with  and some without. Just get a uniform size. They’re coming together nicely, and I will roll them in the coconut.

We need to kind of stick it on there and that’s how we do.

Wouldn’t kids have a blast doing this? We made 24 of these carrot cake balls. They’re not overly sweet just so you know that. If you want to make them a little sweeter you could use a few more dates. We got 24 of these and then we’re going to make the chocolate orange balls and store them in the other side of the container.

Please take 16 dates, 16 is a cup. Okay so these are unsalted whole cashews and roasted. So we got a half a cup. I’m doing three quarters of a cup. This is a quarter of a cup of hempseeds, a third of a cup of cocoa powder. You can use raw cacao if you’d like.

So I’ve got an organic orange here and I’m just going to put in a little zest and then i’ll let that go. I’ll pour this in and I’m going to watch as it comes together. That was about two tablespoons of orange juice. Oh no that’s perfect, see how they’re going to come together nicely? These are going to be sweeter than the carrot cake ones.

We’re not going to roll these in anything. I’m just going to do these plain. Oh yeah they’re fine. I think they will do beautifully. So nice and chocolatey.

Okay these are a little bit sticky so what I’m going to do is… I don’t have much cocoa powder in the bottom of the bag here and I am just going to roll them around in it so they’ll come out looking like a truffle but just a light coating of cocoa and that will kind of make a crust as it sits over time.

So I’m just going to put a couple. It’ll be fine to stay out at room temperature for a while or even outside if you hide the eggs. Or if you just want to use them for display. And if you think that Eating to Live means food is boring and you can’t ever eat fun kinds of foods, this will prove you wrong.
