Serves: 4 servings
Ingredients
1 medium onion, chopped
2 large carrots, chopped
2 cups cooked lentils or 1 15-ounce can low- or no-sodium lentils, rinsed and drained
1½ cups cooked chickpeas or 1 15-ounce can low- or no-sodium chickpeas, rinsed and drained
4 cups low- or no-sodium vegetable broth
2 cups water
3 tablespoons tomato paste
1 teaspoon garlic powder
1 teaspoon thyme
2 teaspoons oregano
1 teaspoon Mrs. Dash, chipotle flavor
3 cups mushrooms, chopped
3-4 cups spinach or baby kale, chopped
Instructions
To a large soup pot over high heat, add all ingredients and stir to combine. Bring to a boil and reduce heat to simmer for 30 minutes. Add the greens and cook for another 5 minutes.
