Easy Lentil Chickpea Stew Recipe

Ingredients
  • 1 medium onion, chopped
  • 2 large carrots, chopped
  • 2 cups cooked lentils or 1 15-ounce can low- or no-sodium lentils, rinsed and drained
  • 1½ cups cooked chickpeas or 1 15-ounce can low- or no-sodium chickpeas, rinsed and drained
  • 4 cups low- or no-sodium vegetable broth
  • 2 cups water
  • 3 tablespoons tomato paste
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • 2 teaspoons oregano
  • 1 teaspoon Mrs. Dash, chipotle flavor
  • 3 cups mushrooms, chopped
  • 3-4 cups spinach or baby kale, chopped
Instructions
  1. To a large soup pot over high heat, add all ingredients and stir to combine. Bring to a boil and reduce heat to simmer for 30 minutes. Add the greens and cook for another 5 minutes.
