Curry Carrot Chickpea Hummus Recipe

This flavorful hummus recipe is great as a standalone dip for veggies, as a great addition to any taco or as a dollop on top of your favorite salad.

Serves: 3 cups
Ingredients
  • 1 small sweet onion, chopped
  • 2 medium carrots, chopped
  • 1 medium navel orange, peeled and quartered
  • 1 teaspoon fresh ginger (about ¾ inch)
  • 2 cans no- or low-sodium chickpeas, rinsed and drained
  • ¼ teaspoon ground black pepper
  • 1 teaspoon cumin
  • ½ teaspoon turmeric
  • ½ teaspoon ground coriander
  • ½ teaspoon ground mustard
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon ground cayenne pepper
Instructions
  1. In a food processor, add the first 4 ingredients and pulse and process to combine. Add the rest of the ingredients and blend until desired consistency.
  2. Note: Feel free to replace the spices with your own favorite curry blend.
