High Protein House Salad with Non-Dairy Ranch Dressing Recipe (video)

If you have a regular blender, you'll need to soak the cashews in the almond milk for about an hour or so before you blend, or it will be too chunky. I highly recommend a Vitamix high-speed blender for this type of recipe.
Serves: 4-6 servings
  • 1 cup cashews
  • ¾ cup non-dairy milk
  • ¼ cup lemon juice
  • 2 tablespoons rice vinegar
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • ¼ teaspoon black pepper, freshly ground
  • SALAD:
  • 1 large head romaine lettuce, chopped
  • 2 medium tomatoes, chopped
  • 3 large carrots, shredded
  • ¼ large red onion, thinly sliced
  1. To make the dressing, in a blender, add all the ingredients and blend until smooth and creamy.
  2. For the salad, in a large bowl, combine all ingredients and stir to combine.
  3. Serve with homemade ranch dressing.
