Chocolate Peanut Butter Coconut Refrigerator Oatmeal Recipe

You can use steel-cut oats in place of the rolled oats if you like; they'll just be a little chewier. I use them a lot and I love them! Just add an extra quarter cup of milk to the recipe.
Serves: 1
  • ¾ cup rolled oatmeal
  • ¾ cup milk of choice (I prefer non-dairy unsweetened almond)
  • 2 teaspoons raw cacao powder (or just use cocoa powder)
  • 1 tablespoon unsweetened shredded coconut
  • 1 teaspoon maple syrup (or honey or agave, etc)
  • 1 tablespoon peanut butter (or any other nut butter)
  • handful raisins or cranberries for sweetness
  1. In a mason jar or bowl, add all ingredients and stir to combine.
  2. Cover with the lid or plastic wrap and refrigerate 3 hours or as long as overnight.
  3. Eat from the jar or add to a bowl and add in any other toppings you'd like!
