Okay, so I hadn’t actually planned on posting this recipe because I was going to jazz it up a bit first, but then I figured I might as well because it is so dang simple to make – it literally took me less than 10 minutes to make, start to finish. And who doesn’t love that, especially when it’s something healthy like Fish Tacos?? The pic looks a little washed out because I used Instagram to take it, and applied a filter. If I’d known I was gonna post it on the blog, I woulda taken more care to capture the colors better.

Easy and Quick Fish Tacos
Makes 4 small tacos
INGREDIENTS 
4 small flour tortillas
3-4 small filets of Tilapia
1 1/2 cups shredded cabbage and carrot mixture
1/4 cup grilled corn
1 tbsp olive oil
seasonings: salt, pepper, dried minced onion, garlic powder
1/4 cup mayonnaise
juice of 1/2 lemon

DIRECTIONS
I used frozen tilapia filets, but any fresh or frozen mild white fish will work fine. Brush both sides of fish with olive oil and season each side with desired amount of seasonings. Mix together the mayonnaise and lemon juice. Warm and slightly brown flour tortillas in a large saute pan over medium-high heat. Assemble the tacos by placing each of the following on top of a warm, flour tortilla: 1/4 of the cabbage, 1 tbsp of the grilled corn sprinkled evenly, 1/4 of the fish in chunks and then spread desired amount of mayo-lemon mixture on top. I love the contrast of the warm tortilla and fish compared to the crunchy, cold cabbage, corn and mayo mixture.

 

Fresh Berries and Whipped Cream
