Mango Coconut Smoothie, 12 oz: (coconut meat (1/4 cup) and water from a young Thai coconut, 1/4 cup almond milk, 1 cup frozen mango, 1/2 banana, water)

The thing that was different on Day 2 versus Day 1 was cravings. On day 1, I was SOOO ready to do this challenge, after having felt so crappy for the 2 weeks before. So I was super motivated and had no problem at all. But yesterday was another story. It’s always said that the first 2-3 weeks of anything like this that you’re committing to is the hardest. And I was craving yesterday hardcore.

But I discovered (remembered from doing this before) that the reason I started craving is because I got caught on conference calls during the time of day when I usually have lunch (2-3 pm ish) so I had lunch/dinner really late.

I totally meant to have some soup for dinner after lunch of salad, but since I had the ginormous salad so late, I didn’t have room for anything else. Except for the super sweet pineapple I had for dessert. And the issue was I ate pineapple while I was getting my salad ready, which messed with my tastebuds, so when I had the salad, it didn’t taste very good. But I forced myself to eat it, so I could have pineapple for dessert. And all was well.

Today was a bit easier, because I made sure to save the pineapple for after the salad. I ate a bit earlier today, so I didn’t have as much craving. Just note to self: don’t get super hungry, because that’s when craving sets in.

Tonight the challenge that remains is that I’m going out dancing. I usually drink when I’m out, but I’m abstaining during the challenge. So that’s why I made the yummy mango coconut smoothie, to hold me over tonight. I’ll just have water while I’m out…hopefully!

Tomorrow will be interesting because I’m out of salad. And I’m cooking for some friends for dinner, so midday I think we might go to a local organic, vegan restaurant.

The planning is the important part. I have to know what my options are so I don’t ever get to that frantic crave-y, hungry state.
