I made this recipe up in my head while I was creating an Instagram photo one day, and I knew I had to share it with you. Even whatshisface (husband) was like…”Whoa. This is the best one yet.” And I was all, “Yeah I know.” With a sweet smile to cover up the sheer amount of swagger I felt.

Some Notes About the Coconut Pomegranate Cherry Smoothie

Coconut Pomegranate Cherry Smoothie RecipeI’m not even gonna get into this any further, I’m just gonna give you the recipe. But let me warn you that even though this is technically a “green smoothie”, this is more like dessert…I probably wouldn’t go having it on an every day basis, is what I mean.

The coconut milk is pretty rich (though you can use light if you want), it uses fruit juice as one of the liquids and also…it’s fun to top it with fun dessert things and eat it with a spoon. :)

However, this would be a great little thing to say halve and use as an emergency sweet tooth kinda thing…not that I know anything about needing that…

Here’s the recipe (also, don’t say I didn’t warn you):

Feel free to use light coconut milk if you prefer.

Ingredients
  • 1 cup coconut milk
  • 1 cup pomegranate juice
  • 2 medjool dates (3 deglet noor)
  • 2 stalks kale, stems removed
  • 2 cups frozen cherries
  • 1 frozen ripe banana
  • water if necessary for consistency
Instructions
  1. Add all ingredients to a high-powered blender such as a Vitamix and blend until the dates and kale are completely pulverized.
  2. Add toppings desired such as flake coconut, pomegranate arils or cacao nibs.
