So I’ve been saving some strawberries from my recent trip to Wish Farms, and a cook friend of mine, Vicki, inspired me to make this Strawberry Soup recipe! I’ve wanted to make something like this over here in the US for a while, ever since I had my first fruit soup in Hungary last summer. This is a different and delicious take on the Hungarian version. It’s perfect for parties in the spring and summer and makes for a great conversation starter!

STRAWBERRY SOUP RECIPE
adaptation of this recipe: Food Network Robin Miler’s Strawberry Soup
INGREDIENTS
Serves 4-6

2 cups hulled and sliced fresh or (thawed) frozen strawberries
1 cup orange juice
1 cup Greek vanilla yogurt
1/2 teaspoon vanilla extract
1/4 c light agave nectar (or powdered sugar)
Whipped topping, as needed
Fresh mint sprigs, optional

DIRECTIONS

In a blender, combine all the ingredients but the whipped topping and mint and process until smooth. Ladle the soup into bowls and top with a dollop of whipped topping. Garnish with mint, if desired.
