You'll need a Vitamix or a Blendtec blender to make this soup the best. If you use a regular blender, I'm sure the cashews won't be a good, perfectly creamy consistency but rather will be a bit gritty.

Ingredients
  • 2 red bell peppers, de-seeded and roughly chopped
  • ¼ cup raw cashews (unroasted and unsalted)
  • ½ cup water
Instructions
  1. Add all ingredients to your high-powered blender and combine until completely creamy and smooth. Let the blender run for 2-3 minutes more to warm up the soup to a nice steaming temperature.
