Because the amazing Girl Scout Tagalong Copycat cookies are out of season, now you can make them at home whenever you need them!

Chocolate Peanut Butter Shortbread Cookies

INGREDIENTS
1 cup (2 sticks) of butter
1 cup all-purpose flour
1/4 tsp salt
1/2 cup powdered sugar
1 tsp vanilla extract

1/2 cup peanut butter
1/2 cup powdered sugar

1 cup semi-sweet chocolate chips

DIRECTIONS
Make the shortbread cookies. Whip the room-temperature butter using a hand mixer in a medium bowl for about a minute, until it is creamy. Add the sugar, then beat until incorporated. Add the vanilla and beat that in also. Add the flour and salt and mix this part by hand, gently, just until it comes together into a dough. Wrap in plastic wrap in a flattened disk shape and refrigerate until chilled and firm, about 15-20 minutes.

Preheat the oven to 350 degrees Fahrenheit. Roll dough out on a floured surface using a floured rolling pin until the dough is less than 1/4 inch thick. Punch cookies out using a cookie cutter and place on a piece of parchment paper on a baking sheet. Bake the cookies for 8-10 minutes or just until you start to see a little golden brown around the edges. Allow cookies to cool completely.

Make the peanut butter mixture. Mix together equal parts peanut butter and powdered sugar until mixture becomes crumbly consistency. You will need about a cup of the mixture total.

Melt the chocolate. Microwave about a cup of semi-sweet chocolate chips in a microwave safe bowl for about 1.5 minutes, stirring frequently to make sure it doesn’t burn.

Assemble the cookies. Create a disk of peanut butter just a bit smaller than the cookie shape and place on top of a cookie. Cover the tops of the peanut butter and cookie with the melted chocolate and make sure to spread to the outer edges, in order to hold the peanut butter on the cookie. Replace cookies onto the parchment paper. When finished assembling, store cookies in fridge to harden and remain solid.

Tip: The cookies must remain in the fridge to guard against melting, but they are best eaten at room temperature!
